One of the most important aspects of being a sommelier – the creation of appropriate food and wine pairings – happens behind the scenes, and involves the participation of culinary team members. The Sommelier must look always formal, wearing a tuxedo or tailormade black apron over a shirt. The fabric of the jacket, tuxedo or shirt always have to be of special quality.
